The antioxidant activity of (a) ascorbic acid, with IC50 value of 1.28 ± 0.23 μg/mL; (b) R. tuberosa (L.) extract, with IC50 value of 16.42 ± 2.12 μg/mL; and (c) microcapsules of R. tuberosa (L.) extract prepared in pH 4, 0.1% (w/v) chitosan concentration and 90 min stirring time, with IC50 value of 123.97 ± 9.33 μg/mL.
